Assuming you sharpen the knife to the previous edge angle (which is recommended), each knife is finished in less than a minute, including honing and polishing on the honing wheel. This means that you can professionally sharpen all your knives with a Tormek in just a few minutes, instead of hours on a whetstone, or days if you send the knives out for sharpening.

A sharp knife is a safer knife. It cuts cleaner, more precisely and has less chance of slippage since it requires less pressure. When sharpening a knife on the Tormek T-2, the knife guide maintains a constant angle against the grinding wheel to yield a consistent sharp edge on both sides of the knife. The Tormek T-2 is gentle on your knives. “Sharpen, don’t shorten.” Thanks to the slow turning diamond wheel and the high accuracy, the machine does not remove any more steel than necessary, making knives last longer. Compared to conventional sharpening machines that use high-speed abrasive belts and generate more heat, the T-2’s fine-grained diamond wheel and slow rotation prevent edges from overheating and losing hardness.

We still work closely with the Swedish Culinary Team (winner of Culinary World Cup 2018) and make sure that Team Manager Fredrik Andersson and his team always have sharp knives to work with in the kitchen, especially before big competitions like the Culinary World Cup and the Culinary Olympics.
