General Tormek Questions / Flattening the Stone grader
« on: February 18, 2018, 02:05:12 am »
Hello, everyone.

I use the Stone grader for cleaning the SJ stone only. But Grader's fine side is not a flat so I have to flatten it. How can I do this? Can I use sand paper+glass?

I used a diamond plate to clean it, but I need a stone grader to remove the truing groove and I feel it is more convenient to use.

Knife Sharpening / What is the Lowest BESS score you can get with Tormek?
« on: February 04, 2018, 10:21:24 am »
Start Tormek and end with Tormek. You can't use any compound(paste, spray....) other than PA-70, and can't use paper wheels. What is the lowest BESS score you can get in this case?

I can get 100 ~ 150 with the Victorinox kitchen knife.(15 degrees per side)

Knife Sharpening / The need for a variety of accessories
« on: February 03, 2018, 02:54:37 am »
I look forward to making more variety of accessories at Tormek for knife sharpening.

1. Real Universal Support
The name of the US-105 is 'Universal support', but this is not really universal. For a Cleaver knife and a Castella knife, it should be higher and wider. For Tormek, it will be much easier than improving a jig or developing a new one.

2. A jig for a thicker knife
I know that the SVM-45 is designed for as many knives as possible but it can't be used for all knives. I'm not expecting a completely new jig now available for all knives. As with the SVM-140 for bent knives, additional jigs are needed for thicker knives. Wootz did this directly. So for Tormek this wouldn't be a big problem.

And the more accessories, the more money Tormek will earn. It is win-win for each other.

Knife Sharpening / Tilted collar of knife jig

I found a reason for the above problem. It was a tilted collar.(Rotating the collar doesn't solve the it) I have two SVM-45, but all have this problem.

Have you ever been discussed about this issue before?

Is there a way I can solve it myself?

General Tormek Questions / How to keep leather wheel
« on: January 21, 2018, 05:52:36 am »
I decided not use the leather wheel. But someday, it may change.

Anyway, what is the good method to store the leather wheel? How about sealing it in a plastic bag?

Knife Sharpening / Asymmetric knife jig
« on: January 16, 2018, 10:40:05 am »
I have two SVM-45. The one is 1~2 month old, the another is new one.

But these are all asymmetric.

It depends on the orientation of the handle. If I set it like the first picture, the right side is set as low as 0.5 ~ 2 degrees. But in the case of the second picture, the angles on both sides become the same (check with anglemaster).

The jig that I used for a month was OK at first but over time caused this problem. I also have similar problems with the SVM-140.

Does your jig have this problem?

Wood Carving / Sharpening the chisel with SJ
« on: January 14, 2018, 09:12:59 am »
Following is a general method for sharpening chisels with Tormek.

SG(#220) -> SG(#1000) -> Leather wheel.

But I want to do it with SJ wheel instead leather wheel.

In this case, how can I remove the burr of a flat side?

Knife Sharpening / Does Tormek make a scratch on the side of the blade?
« on: January 08, 2018, 06:53:06 am »
Tormek is water cooled sharpener and has water trough. During and after the sharpening, the water in the trough has stone grit coming off the grinding stone.

So when I sharpen high-end knives, I worry that this grit will make a scratch on the side of the blade because I wipe the blade to check burr very often.

General Tormek Questions / Aligning shaft, stone, and washer

I agree with this video.

In particular, this alignment is essential to using SJ.

But how about a washer?

Do we have to align washer too?

Knife Sharpening / SJ can't polish S110V
« on: December 27, 2017, 05:00:20 am »
I sharpened Spyderco Military CPM-S110V.

As you know, S110V has very high wear-resistance. But SG & SB stone ground it well.

Problem is SJ. SJ can't polish S110V.(But it can polish S30V)

I tried it for a long time and to push it harder.(not very hard)

But the result is this photo.

Knife Sharpening / Angle for low-grade steel knives
« on: December 25, 2017, 07:00:53 am »
Merry Christmas everyone.

For the edge of high-end knives, 15-degree per side is a good choice. Maybe 17~18 degree is good too.

But low-quality kitchen knives(chef & butcher knives) need a larger angle.

Do you think how many degrees are appropriate for it?

General Tormek Questions / Leather wheel doesn't work effectively.
« on: December 18, 2017, 02:20:48 pm »
I applied the correct amount of oil at first, then used the PA-70 without additional oil. But the leather wheel that worked well at first is not good at all these days.

For comparison, I applied PA-70 on a leather strop and it gave me a slightly better result than a leather wheel.

What's wrong with my leather wheel?

Knife Sharpening / Line laser and eyesight
« on: December 15, 2017, 08:54:17 am »
Is there a problem with my eyesight if I use a line laser for knife sharpening?

Because the stone of Tormek is wet, will the laser be reflected and enter the eyes?
